- 1 lb 450 g shrimp, peeled & deveined
- 4 -5 ripe tomatoes (diced)
- 5 cloves garlic (minced)
- 2 tbsp fresh dill (chopped)
- 3 tbsp olive oil
- Salt & pepper (to taste)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Stir in tomatoes, cook until softened and saucy, about 5 minutes.
- Add shrimp, cook 1–2 minutes per side until pink and opaque.
- Stir in dill, season to taste, and serve immediately.
Notes
- Swap dill for basil, parsley, or cilantro.
- Use canned San Marzano tomatoes when fresh aren’t in season.
- Avoid overcooking shrimp to keep them tender.
