  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

For the Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook rice according to package directions; set aside.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and sauté 6–8 minutes until golden and cooked through (165°F internal temperature).
  4. Mix mayonnaise, sriracha, honey, garlic powder, and lime juice in a bowl to make sauce. Adjust to taste.
  5. Add mixed vegetables to skillet with chicken; cook 2–3 minutes until just tender.
  6. Remove skillet from heat. Toss chicken and vegetables with sauce until well coated.
