- 1/2 cup finely diced sweet yellow onion
- 1 cup diced green bell pepper
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 1 tablespoon minced garlic
- 1 teaspoon freshly grated ginger root
- 1 pound lean ground beef (90/10 or 80/20)
- 1/3 cup low sodium soy sauce
- 1/4 cup hoisin sauce
- 1-2 teaspoons sriracha, to taste
- 1/2 teaspoon kosher salt (optional)
- 1/2 teaspoon fresh cracked black pepper (optional)
- 17.3 ounces Jasmine rice (ready rice, boil-in-bag, instant, or leftover)
- Toasted sesame seeds (optional garnish)
- Thinly sliced green onions (optional garnish)
Instructions
- Heat olive oil in a deep 10-inch skillet over medium-high heat
- Add diced onion and bell peppers and cook 5โ7 minutes, stirring often until softened and glossy
- Add minced garlic and grated ginger and stir constantly for 1 minute until fragrant
- Add ground beef and break into small crumbles while cooking
- Cook 5โ7 minutes until no longer pink and drain excess grease
- Reduce heat to medium and stir in soy sauce, hoisin sauce, and sriracha
- Cook 5 minutes, stirring often, until sauce thickens and coats the beef
- Taste and adjust with salt and black pepper if needed
- Prepare Jasmine rice according to package instructions and fluff with a fork
- Spoon rice into bowls and top with beef and pepper mixture
- Garnish with toasted sesame seeds and sliced green onions if desired
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep rice and beef mixture separate for best texture. Reheat gently in the microwave or skillet with a splash of water. Easily customize with ground turkey, chicken, plant-based crumbles, or cauliflower rice.
