Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter

Cheesecake Layer

  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Apple Layer

  • 2 medium apples (peeled and finely diced)
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon

Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup cold butter (cubed)

Caramel Drizzle

  • 1/4 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. Combine crust ingredients, press into the pan, and bake for 8–10 minutes. Cool slightly.
  3. Beat cream cheese and sugar until smooth. Add eggs and vanilla; mix well. Pour over crust.
  4. Toss diced apples with brown sugar and cinnamon. Scatter over cheesecake layer.
  5. Mix streusel ingredients until crumbly. Sprinkle over apples.
  6. Bake 35–40 minutes, until center is set and top is golden. Cool, then chill at least 2 hours.
  7. Lift bars from pan, slice, and drizzle with caramel before serving.
