Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
Cheesecake Layer
- 16 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Apple Layer
- 2 medium apples (peeled and finely diced)
- 1 tbsp brown sugar
- 1/2 tsp ground cinnamon
Streusel Topping
- 1/2 cup all-purpose flour
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup cold butter (cubed)
Caramel Drizzle
- 1/4 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Combine crust ingredients, press into the pan, and bake for 8–10 minutes. Cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs and vanilla; mix well. Pour over crust.
- Toss diced apples with brown sugar and cinnamon. Scatter over cheesecake layer.
- Mix streusel ingredients until crumbly. Sprinkle over apples.
- Bake 35–40 minutes, until center is set and top is golden. Cool, then chill at least 2 hours.
- Lift bars from pan, slice, and drizzle with caramel before serving.
Notes
- Use tart apples like Granny Smith for contrast.
- Streusel works best with very cold butter.
- Bars slice cleanest when fully chilled.
