- 1 1/2 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 1/2 cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray, as needed
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 1/2 cups shredded cheddar or fiesta blend cheese, divided
- 1 teaspoon garlic powder
- 1/2 cup salsa (mild)
Instructions
- Preheat oven to 350ยฐF.
- In a large skillet over medium-high heat, cook ground beef until no pink remains, about 6โ8 minutes, then drain well.
- Add chopped onion and red bell pepper to the skillet and cook 4 minutes until tender. Stir in taco seasoning.
- In a bowl, mix biscuit mix and water just until combined.
- Coat a 9ร13 baking dish with cooking spray and press biscuit dough evenly into the bottom.
- Bake biscuit base for 5โ8 minutes until lightly set and golden.
- Spread beef mixture evenly over the partially baked biscuit base.
- In a bowl, mix sour cream, mayonnaise, green chiles, garlic powder, and 3/4 cup shredded cheese until smooth.
- Spread creamy mixture evenly over beef layer.
- Spoon small dollops of salsa over the top and sprinkle remaining 3/4 cup cheese evenly.
- Bake 30 minutes until bubbly and golden.
- Let rest 5 minutes before slicing and serving.
Notes
Drain beef thoroughly to prevent greasiness. Do not overmix biscuit dough. For extra heat, use hot salsa or pepper jack cheese. Store leftovers in an airtight container up to 4 days or freeze unbaked up to 3 months.
