Description

This Cheesy Butternut Squash Casserole is creamy, comforting, and topped with a crispy, golden cheese crust perfect for a cozy side dish or even a main!


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 375°F (190°C)
  2. In a bowl, toss butternut squash cubes with olive oil, salt, pepper, and garlic powder
  3. Spread the squash on a baking sheet and roast for 25-30 minutes or until tender
  4. Transfer roasted squash to a mixing bowl and mash slightly
  5. Stir in sour cream, milk, half of the cheddar cheese, and Parmesan cheese
  6. Transfer the mixture to a greased casserole dish
  7. Top with the remaining cheddar cheese and sprinkle smoked paprika if using
  8. Bake for another 15-20 minutes or until the top is golden and bubbly
  9. Let cool slightly before serving


Notes

To make ahead, prepare the squash mixture and refrigerate. Add cheese topping and bake before serving. You can also add cooked bacon or sautéed onions for extra flavor.
