Description

A cozy, one-pan comfort meal made with tender chicken, creamy cheddar cheese, fluffy basmati rice, and perfectly steamed broccoli. This dish brings warmth and ease to any dinner table.


Ingredients

  • 1 tbsp extra-light tasting virgin olive oil
  • 3 boneless (skinless chicken breasts (or 2 if large))
  • Salt and black pepper (to taste)
  • 1 cup basmati or long-grain white rice
  • 2 cups chicken broth (full-salt or low-sodium)
  • 1 12 oz bag frozen steamable broccoli
  • 1 to 1 1/2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a deep skillet or Dutch oven over medium heat.
  2. Season chicken with salt and pepper. Sear on both sides until golden (about 4–5 mins per side). Remove and set aside.
  3. Add rice to the pan and toast lightly, stirring for 2 minutes.
  4. Pour in chicken broth. Return chicken to the pan, nestling into the rice.
  5. Bring to a boil, then reduce to a low simmer. Cover and cook for 15 minutes.
  6. Microwave broccoli per package directions. Add on top of the rice after 15 minutes, then cover and cook for 5 more minutes.
  7. Remove from heat. Take out chicken and cube or slice.
  8. Stir in shredded cheddar cheese until melted and creamy. Return chicken to the pot.
  9. Let rest for 3–4 minutes before serving.


Notes

  • Use freshly shredded cheese for best melting.
  • Basmati rice provides the best flavor and texture.
  • For extra richness, stir in a tablespoon of butter with the cheese.
