Description
A cozy, one-pan comfort meal made with tender chicken, creamy cheddar cheese, fluffy basmati rice, and perfectly steamed broccoli. This dish brings warmth and ease to any dinner table.

- 1 tbsp extra-light tasting virgin olive oil
- 3 boneless (skinless chicken breasts (or 2 if large))
- Salt and black pepper (to taste)
- 1 cup basmati or long-grain white rice
- 2 cups chicken broth (full-salt or low-sodium)
- 1 12 oz bag frozen steamable broccoli
- 1 to 1 1/2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a deep skillet or Dutch oven over medium heat.
- Season chicken with salt and pepper. Sear on both sides until golden (about 4–5 mins per side). Remove and set aside.
- Add rice to the pan and toast lightly, stirring for 2 minutes.
- Pour in chicken broth. Return chicken to the pan, nestling into the rice.
- Bring to a boil, then reduce to a low simmer. Cover and cook for 15 minutes.
- Microwave broccoli per package directions. Add on top of the rice after 15 minutes, then cover and cook for 5 more minutes.
- Remove from heat. Take out chicken and cube or slice.
- Stir in shredded cheddar cheese until melted and creamy. Return chicken to the pot.
- Let rest for 3–4 minutes before serving.
Notes
- Use freshly shredded cheese for best melting.
- Basmati rice provides the best flavor and texture.
- For extra richness, stir in a tablespoon of butter with the cheese.
