- 3 boneless (skinless chicken breasts)
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp oregano
- Pinch crushed chili pepper flakes
- Salt & black pepper (to taste)
- 2 tbsp unsalted butter
- 5 large yellow onions (thinly sliced)
- 1/4 cup chicken broth (low sodium)
- 4 cloves garlic (minced)
- 1 cup shredded mozzarella cheese
- Fresh parsley (chopped, for garnish)
Instructions
- Preheat oven to 400ยฐF. Lightly grease a casserole dish.
- Pound chicken to even thickness. Season with garlic powder, onion powder, oregano, chili flakes, salt, and pepper. Place in dish.
- In a skillet, melt butter over medium heat. Add onions and cook, stirring occasionally, until caramelized (20โ25 minutes). Deglaze with chicken broth as needed.
- Stir in garlic, cooking 30 seconds until fragrant. Remove from heat and cool slightly.
- Spread caramelized onions over chicken. Top with mozzarella.
- Bake 20โ25 minutes, until chicken reaches 165ยฐF and cheese is melted.
- Broil 2 minutes for a golden topping.
- Garnish with parsley and serve.
