- 2 large chicken breasts (boneless & skinless)
- 2 tbsp olive oil (divided)
- 4 cloves garlic (minced)
- 2 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cream cheese (softened)
- 2 cups spinach (rinsed)
- 1 cup mozzarella cheese (shredded)
Instructions
- Cut chicken breasts horizontally to make 4 thinner fillets.
- In a bowl, mix 1 tbsp olive oil, garlic, Italian seasoning, red pepper flakes, salt, and pepper. Coat chicken and marinate for 15 minutes.
- Preheat oven to 400°F (200°C).
- Heat 1 tbsp olive oil in a pan. Sauté spinach for 3–5 minutes until wilted, then set aside.
- Place chicken fillets in a greased casserole dish. Spread cream cheese over each piece, top with spinach, then mozzarella.
- Bake 25–30 minutes, until chicken reaches 165°F internally and cheese is golden brown.
Notes
- For a lighter version, substitute Greek yogurt for cream cheese.
- If using frozen spinach, thaw and squeeze dry to avoid excess liquid.
- Add parmesan for extra flavor.
