Description

A creamy, cheesy, and savory chicken bake layered with garlic-seasoned chicken breasts, sautéed spinach, and melted mozzarella. Perfect for an easy weeknight dinner or family gathering.


Ingredients

  • 2 large chicken breasts (boneless & skinless)
  • 2 tbsp olive oil (divided)
  • 4 cloves garlic (minced)
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cream cheese (softened)
  • 2 cups spinach (rinsed)
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Cut chicken breasts horizontally to make 4 thinner fillets.
  2. In a bowl, mix 1 tbsp olive oil, garlic, Italian seasoning, red pepper flakes, salt, and pepper. Coat chicken and marinate for 15 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Heat 1 tbsp olive oil in a pan. Sauté spinach for 3–5 minutes until wilted, then set aside.
  5. Place chicken fillets in a greased casserole dish. Spread cream cheese over each piece, top with spinach, then mozzarella.
  6. Bake 25–30 minutes, until chicken reaches 165°F internally and cheese is golden brown.


Notes

  • For a lighter version, substitute Greek yogurt for cream cheese.
  • If using frozen spinach, thaw and squeeze dry to avoid excess liquid.
  • Add parmesan for extra flavor.
