Ingredients

- 1 lb ground beef
- 1 (20 oz) bag frozen cauliflower rice
- 1 (10 oz) can diced tomatoes & chilies
- 1 packet taco seasoning
- 1/2 cup water
- 1 diced bell pepper
- 1 small diced yellow onion
- 1 tbsp oil (olive, avocado, or preferred cooking oil)
- 1+ cups shredded cheddar cheese
Instructions
- Set a large skillet over medium heat and add oil, diced onion, and bell pepper.
- Sautรฉ for 3โ4 minutes until vegetables soften.
- Add ground beef and cook until no longer pink, breaking it apart as it browns.
- Stir in taco seasoning and 1/2 cup water.
- Add frozen cauliflower rice and diced tomatoes with chilies.
- Stir well and simmer for about 10 minutes until heated through and slightly thickened.
- Sprinkle shredded cheddar cheese evenly over the top.
- Cover and allow cheese to melt completely.
- Serve warm with desired taco toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat on the stovetop with a splash of water or microwave in short intervals, stirring between. Customize with avocado, jalapeรฑos, sour cream, or fresh cilantro.
