Description

A bold, cheesy one-pan skillet packed with taco-seasoned ground beef, tender cauliflower rice, sweet bell peppers, and a melty cheddar finishย  comfort food ready in under 30 minutes.


Ingredients

  • 1 lb ground beef
  • 1 (20 oz) bag frozen cauliflower rice
  • 1 (10 oz) can diced tomatoes & chilies
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 diced bell pepper
  • 1 small diced yellow onion
  • 1 tbsp oil (olive, avocado, or preferred cooking oil)
  • 1+ cups shredded cheddar cheese


Instructions

  1. Set a large skillet over medium heat and add oil, diced onion, and bell pepper.
  2. Sautรฉ for 3โ€“4 minutes until vegetables soften.
  3. Add ground beef and cook until no longer pink, breaking it apart as it browns.
  4. Stir in taco seasoning and 1/2 cup water.
  5. Add frozen cauliflower rice and diced tomatoes with chilies.
  6. Stir well and simmer for about 10 minutes until heated through and slightly thickened.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Cover and allow cheese to melt completely.
  9. Serve warm with desired taco toppings.


Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat on the stovetop with a splash of water or microwave in short intervals, stirring between. Customize with avocado, jalapeรฑos, sour cream, or fresh cilantro.
