Ingredients

  • 2 blocks (8 ounces each cream cheese, room temperature)
  • 1 cup white cheddar cheese (shredded)
  • 1 cup dried cranberries (roughly chopped, divided)
  • 1 cup pecans (finely chopped, divided)
  • 2 tablespoons fresh chives (chopped, divided)
  • Crackers (for serving)

Instructions

  1. In a large bowl, mix cream cheese, white cheddar, ½ cup cranberries, ½ cup pecans, and 1 tbsp chives with a hand mixer.
  2. Scrape down sides, form into a ball with greased hands.
  3. Wrap in plastic and chill 1 hour until firm.
  4. Mix remaining cranberries, pecans, and chives on a plate.
  5. Unwrap cheese ball and roll in coating mixture, pressing to adhere.
  6. Let rest 15 minutes at room temp. Serve with crackers.

Notes
