- 1 cup white cheddar cheese (shredded)
- 1 cup dried cranberries (roughly chopped, divided)
- 1 cup pecans (finely chopped, divided)
- 2 tablespoons fresh chives (chopped, divided)
- Crackers (for serving)
Instructions
- In a large bowl, mix cream cheese, white cheddar, ½ cup cranberries, ½ cup pecans, and 1 tbsp chives with a hand mixer.
- Scrape down sides, form into a ball with greased hands.
- Wrap in plastic and chill 1 hour until firm.
- Mix remaining cranberries, pecans, and chives on a plate.
- Unwrap cheese ball and roll in coating mixture, pressing to adhere.
- Let rest 15 minutes at room temp. Serve with crackers.
Notes
Can be made 1 day ahead. For added flavor, lightly toast the pecans. Use unsweetened dried cranberries for a more balanced flavor.
