- 1 pound lean ground beef (90%)
- 1 packet taco seasoning
- 3/4 cup red enchilada sauce
- 2 1/2 cups Oaxaca cheese, Mexican blend, or Monterey Jack cheese (shredded)
- 10 corn tortillas
- 1 tablespoon olive oil
Instructions
- Preheat oven to 450ยฐF and line a baking sheet with parchment paper
- Heat a skillet over medium-high heat and brown the ground beef, breaking it apart as it cooks
- Drain excess grease if needed
- Stir in taco seasoning and enchilada sauce and bring to a gentle simmer
- Remove from heat once slightly thickened and well coated
- Wrap tortillas in a damp paper towel and microwave 30โ60 seconds until pliable
- Brush one side of each tortilla lightly with olive oil
- Place tortilla oil-side down on baking sheet
- Add 2 tablespoons cheese to half of tortilla
- Top with 1/4 cup seasoned beef
- Add another 2 tablespoons cheese
- Fold tortilla over filling
- Repeat with remaining tortillas, arranging in a single layer
- Bake for 16 minutes until tortillas are golden and crisp and cheese is melted and bubbly
- Let cool for 3 minutes before serving
