Description

A refreshing cucumber sandwich with herbed cream cheese and Greek yogurt, perfect for teatime, light lunches, or summer snacks.


Ingredients

  • 2 oz cream cheese (at room temperature)
  • 1 tbsp low-fat plain Greek yogurt
  • 1 tbsp fresh chives (sliced)
  • 1 tbsp fresh dill (chopped)
  • 1/4 tsp ground pepper
  • 2 slices whole-wheat bread
  • 1/3 cup thinly sliced English cucumber

Instructions

  1. In a bowl, mix cream cheese, yogurt, chives, dill, and pepper until smooth.
  2. Spread the mixture evenly on both slices of bread.
  3. Layer the cucumber slices on one slice of bread.
  4. Top with the second slice, press gently, and cut.
  5. Serve chilled or immediately.
