- 3 tbsp light brown sugar
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
Crust
- 1 1/2 cups graham cracker crumbs
- 5 tbsp unsalted butter (melted)
- Crumble Topping
- 2/3 cup all-purpose flour
- 1/2 cup quick oats
- 1/3 -1/2 cup light brown sugar
- 1/2 tsp cinnamon
Pinch of salt
- 3 -4 tbsp unsalted butter (melted)
Cheesecake Filling
- 625 g cream cheese (softened)
- 3 large eggs
- 1/3 cup full-fat sour cream
- 1 tsp pure vanilla extract
- 1 tbsp all-purpose flour
- Optional: 2-3 tbsp brown sugar + 1/2 tsp cinnamon
Instructions
- Sautรฉ apples with sugar, cinnamon, and nutmeg for 6โ7 mins until softened. Cool.
- Preheat oven to 350โฏยฐF (175โฏยฐC). Line an 8-inch springform pan.
- Make crust by mixing crumbs and butter. Press into pan. Bake 8 mins.
- Mix crumble topping ingredients until coarse crumbs form.
- Beat cheesecake filling: cream cheese, sugar, eggs, sour cream, vanilla, and flour.
- Assemble: Pour โ filling over crust. Layer half the apples. Add rest of filling, then apples, and top with crumble.
- Bake at 325โฏยฐF (163โฏยฐC) with a water dish for 45 mins.
- Cool and chill for at least 4 hours or overnight.
