- 10 cups Chex cereal
- 1 1/2 cups seasonal chocolate candy (pastel chocolate eggs or candy-coated chocolates)
- 3/4 cup creamy peanut butter
- 1 1/2 cups white chocolate chips
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 1 1/2 teaspoons vanilla extract
- 2 cups powdered sugar
Instructions
- Pour Chex cereal and half of the seasonal chocolate candy into a large mixing bowl.
- In a microwave-safe bowl combine peanut butter, white chocolate chips, butter, and olive oil.
- Microwave for 30 seconds, stir, then continue microwaving in 15-second intervals until smooth.
- Stir vanilla extract into the melted mixture.
- Pour the warm peanut butter mixture over the cereal.
- Gently stir until the cereal is evenly coated.
- Slowly sprinkle powdered sugar over the cereal while gently mixing.
- Spread the mixture onto a baking sheet in an even layer.
- Allow it to cool completely.
- Transfer to a serving bowl and mix in the remaining seasonal chocolate candy.
- Serve immediately or store in an airtight container.
Notes
Work quickly once the chocolate mixture is melted so the cereal coats evenly. Stir gently to avoid crushing the cereal. Store in an airtight container at room temperature for up to 1 week in a cool, dry place.
