Ingredients

Units Scale
For the Crispy Chicken:
  • 1.5 lbs chicken tenderloins (or chicken breasts, cut into strips)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
For the Bang Bang Sauce:
  • 1 cup mayonnaise
  • 1/2 cup sweet chili sauce
  • 1-2 tbsp sriracha (to taste)
  • 1 tbsp fresh lime juice
For Assembly:
  • 12 slider buns (brioche or Hawaiian rolls)
  • 1 cup shredded lettuce or coleslaw mix
  • Sliced green onions (optional)

Instructions

  1. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and fresh lime juice until smooth and creamy. Refrigerate.
  2. Place chicken tenderloins in a shallow dish and pour buttermilk over them. Let soak for at least 15 minutes.
  3. In another shallow dish, whisk together flour, paprika, garlic powder, salt, and black pepper.
  4. Heat about 1 inch of vegetable oil in a heavy-bottomed skillet over medium-high heat to 350ยฐF.
  5. Remove chicken from buttermilk, let excess drip off, then dredge thoroughly in seasoned flour, pressing coating onto chicken.
  6. Fry chicken for 3โ€“4 minutes per side until golden brown and cooked through. Transfer to a wire rack to drain.
  7. Place crispy chicken in a large bowl and toss with three-quarters of the chilled bang bang sauce until evenly coated.
  8. Lightly toast slider buns if desired.
  9. Add shredded lettuce to the bottom bun, top with saucy chicken, garnish with green onions, and add the top bun.
  10. Serve immediately with extra sauce if desired.

Notes

Maintain oil temperature at 350ยฐF for best crispiness. Fry in batches to avoid overcrowding. For a lighter option, air fry at 350ยฐF for 4โ€“5 minutes or bake at 425ยฐF for 18โ€“20 minutes flipping halfway. Store chicken and sauce separately in the refrigerator for up to 3 days.
