Description
Crispy on the outside, gooey in the center, these Easy Chicken Quesadillas are filled with tender taco-seasoned chicken, sautéed peppers, onions, and melty Mexican cheese. A quick, family-friendly meal ready in under 30 minutes.

- 1 tablespoon oil
- 1 lb chicken breast, cut into small pieces
- 1 tablespoon taco seasoning
- 1/2 large bell pepper, diced (any color)
- 1/2 yellow onion, diced
- 2 tablespoons unsalted butter
- 6 flour tortillas
- 2 cups Mexican cheese, shredded
Instructions
- Heat the oil in a large skillet over medium heat
- Add diced chicken and taco seasoning and cook 6–8 minutes until fully cooked and lightly browned
- Stir in diced bell pepper and onion and cook 3–4 minutes until softened
- Remove chicken mixture from skillet and set aside
- Melt butter in skillet over medium-low heat
- Place one tortilla in skillet and sprinkle cheese over half
- Add chicken mixture on top of cheese
- Sprinkle additional cheese over filling
- Fold tortilla over and cook 2–3 minutes per side until golden and crisp
- Repeat with remaining tortillas and filling
- Slice into triangles and serve immediately
