This Easy Cinnamon Roll Casserole delivers all the cozy vibes of a classic cinnamon roll without the work. A warm, gooey bake of cinnamon-swirled pastry soaked in a maple-vanilla custard and finished with a sweet drizzle. Perfect for slow mornings, holidays, or anytime you need a little comfort.

- 2 tubes refrigerated cinnamon rolls (8 rolls each - about 12 oz or 351g per tube)
- 1/4 cup salted butter, melted
- 1/2 cup milk
- 1/2 cup pure maple syrup
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- Reserved icing packets from cinnamon rolls
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13" baking dish and swirl in melted butter to coat the bottom.
- Open cinnamon roll tubes and set aside icing. Cut each roll into ¾" pieces and scatter in the dish.
- In a large bowl, whisk together milk, maple syrup, eggs, vanilla, and cinnamon until smooth and fully combined.
- Pour custard evenly over cinnamon roll pieces, letting it soak in well.
- Bake uncovered for 35–45 minutes, until puffed, golden, and set in the center.
- Let cool for 10–15 minutes. Warm the reserved icing slightly and drizzle over the top before serving.
Notes
Cool completely before storing. Keep in an airtight container in the fridge for up to 4 days. Reheat slices in the microwave or oven. To make ahead, assemble the night before and bake in the morning. For extra flair, top with chopped pecans, powdered sugar, or a dash of extra cinnamon.
