These Easy Halloween Eyeball Brownie Bites are spooky, fudgy, and fun perfect for parties, school treats, or trick-or-treat night. Made with brownie mix, Junior Mints, chocolate wafers, and candy eyeballs, theyโre quick to bake and a huge hit with kids and adults alike.

- 1 18.3 oz box brownie mix (Betty Crocker recommended)
- 2/3 cup canola oil
- 2 large eggs
- 1/4 cup water
- 1 box Junior Mints
- 34 chocolate vanilla wafers (any color)
- 34 candy eyeballs
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Spray a mini muffin tin with nonstick spray.
- Mix brownie mix, oil, eggs, and water until smooth.
- Scoop batter into muffin tin using a small cookie scoop.
- Bake for 12 minutes.
- Remove from oven, gently press a Junior Mint into each brownie, then top with a vanilla wafer (rounded side up).
- Return to oven for 2โ3 minutes.
- Remove and immediately press a candy eyeball into the center of each wafer.
- Cool for 10โ15 minutes before removing from the tin. Serve and enjoy!
Notes
- Use a fudgy brownie mix for the best texture.
- Candy eyeballs stick best while brownies are still warm.
- Store in an airtight container for up to 3 days.
