  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the steak cubes completely dry with paper towels and season generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites in a single layer and sear for 1โ€“2 minutes per side until browned and caramelized. Remove and set aside.
  4. Reduce heat slightly and add butter to the same skillet.
  5. Once melted, add minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
  6. Add zucchini and cook for 3โ€“5 minutes, stirring occasionally, until tender-crisp.
  7. Return steak bites to the skillet and toss to coat in garlic butter.
  8. Cook another 1โ€“2 minutes until steak is heated through. Garnish with fresh parsley and serve immediately.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a small pat of butter. Avoid overcooking to keep the steak tender. Not recommended for freezing as zucchini may become too soft.
