A one-pan Fajita Chicken Casserole made with juicy chicken breasts, colorful bell peppers, bold fajita seasoning, and melted mozzarella. An easy weeknight dinner that delivers all the Tex-Mex flavor without the fuss.

- 4 small chicken breasts (skinless & boneless)
- 1 tbsp olive oil
- 1 red bell pepper (seeded & sliced into strips)
- 1 green bell pepper (seeded & sliced into strips)
- 1 yellow onion (finely chopped)
- 1 cup shredded mozzarella
- Fresh cilantro (chopped (for garnish))
Fajita Seasoning:
- 1 tsp cumin powder
- 1 1/2 tsp chili powder
- 2 tsp garlic powder
- 1 tbsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with oil.
- Mix fajita seasoning. Rub most of it onto chicken, saving some for veggies.
- Place chicken in baking dish. Drizzle with olive oil.
- Top with bell peppers & onion. Sprinkle remaining seasoning.
- Cover with shredded mozzarella.
- Bake 25–30 minutes, until chicken is cooked through (165°F internal temp).
- Broil 2 minutes for a golden top. Garnish with cilantro & serve.
Notes
- Pound chicken breasts slightly for even cooking.
- Freshly shredded cheese melts better than pre-packaged.
- For extra spice, add jalapeños or use pepper jack cheese.
