Description

A one-pan Fajita Chicken Casserole made with juicy chicken breasts, colorful bell peppers, bold fajita seasoning, and melted mozzarella. An easy weeknight dinner that delivers all the Tex-Mex flavor without the fuss.


Ingredients

  • 4 small chicken breasts (skinless & boneless)
  • 1 tbsp olive oil
  • 1 red bell pepper (seeded & sliced into strips)
  • 1 green bell pepper (seeded & sliced into strips)
  • 1 yellow onion (finely chopped)
  • 1 cup shredded mozzarella
  • Fresh cilantro (chopped (for garnish))

Fajita Seasoning:

  • 1 tsp cumin powder
  • 1 1/2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tbsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with oil.
  2. Mix fajita seasoning. Rub most of it onto chicken, saving some for veggies.
  3. Place chicken in baking dish. Drizzle with olive oil.
  4. Top with bell peppers & onion. Sprinkle remaining seasoning.
  5. Cover with shredded mozzarella.
  6. Bake 25–30 minutes, until chicken is cooked through (165°F internal temp).
  7. Broil 2 minutes for a golden top. Garnish with cilantro & serve.


Notes

  • Pound chicken breasts slightly for even cooking.
  • Freshly shredded cheese melts better than pre-packaged.
  • For extra spice, add jalapeños or use pepper jack cheese.
