A spooky twist on the Italian classic, this Halloween Caprese Pasta Salad features black pasta, juicy cherry tomatoes, creamy mozzarella pearls, and colorful heirloom carrots tossed in a tangy balsamic vinaigrette. Perfect for Halloween parties or festive fall gatherings!


Ingredients

For the Pasta Salad:

  • 1 lb black penne (black bean or black rice penne)
  • 1 cup dark red cherry tomatoes (halved)
  • 8 oz mozzarella pearls or balls
  • 1/4 cup fresh basil (roughly chopped)
  • 1 cup purple (orange, and white carrots, thinly sliced)

For the Balsamic Vinaigrette:

  • 1 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp mustard
  • Coarse salt & black pepper (to taste)

Instructions

  1. Cook pasta to al dente according to package instructions. Drain, rinse under cold water, and chill.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, mustard, salt, and pepper.
  3. In a large bowl, combine pasta, tomatoes, mozzarella, basil, and carrots.
  4. Pour dressing over salad and toss until well coated.
  5. Garnish with extra basil and serve chilled.


Notes

  • For vegan: use dairy-free mozzarella pearls.
  • For crunch, add roasted pumpkin seeds or pine nuts.
  • Best served cold; flavor improves after 1โ€“2 hours in the fridge.
