For the Pasta Salad:
- 1 lb black penne (black bean or black rice penne)
- 1 cup dark red cherry tomatoes (halved)
- 8 oz mozzarella pearls or balls
- 1/4 cup fresh basil (roughly chopped)
- 1 cup purple (orange, and white carrots, thinly sliced)
For the Balsamic Vinaigrette:
- 1 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1/4 tsp mustard
- Coarse salt & black pepper (to taste)
Instructions
- Cook pasta to al dente according to package instructions. Drain, rinse under cold water, and chill.
- In a small bowl, whisk together balsamic vinegar, olive oil, mustard, salt, and pepper.
- In a large bowl, combine pasta, tomatoes, mozzarella, basil, and carrots.
- Pour dressing over salad and toss until well coated.
- Garnish with extra basil and serve chilled.
Notes
- For vegan: use dairy-free mozzarella pearls.
- For crunch, add roasted pumpkin seeds or pine nuts.
- Best served cold; flavor improves after 1โ2 hours in the fridge.
