- 8 oz elbow macaroni (or cavatappi)
- 2 Tbsp butter
- 2 Tbsp flour (or gluten-free blend)
- 2 cups milk (whole or 2%)
- 1 cup shredded white cheddar cheese
- 1 cup shredded mild yellow cheddar cheese
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- Salt and pepper (to taste)
- 1/2 cup panko breadcrumbs
- 1 Tbsp olive oil or melted butter
- Black olive slices (monster eyes)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8x8 baking dish.
- Cook pasta until just under al dente. Drain and set aside.
- Make roux: In a pot, melt butter over medium heat. Stir in flour until smooth and bubbling.
- Add milk slowly, whisking constantly until sauce thickens (about 3–4 minutes).
- Stir in cheeses until smooth. Season with garlic powder, paprika, salt, and pepper.
- Combine pasta and sauce. Mix until all noodles are coated.
- Transfer to baking dish. Press olive slices on top to look like monster eyes.
- Mix breadcrumbs with olive oil or melted butter. Sprinkle evenly over pasta.
- Bake 15–20 minutes until golden and bubbling. Rest 5 minutes before serving.
Notes
- For extra spooky fun, add strips of roasted red pepper for “monster tongues.”
- Make it vegetarian by sticking with veggie toppings.
