Ingredients
- 3 large overripe bananas, mashed (about 1 1/2 cups)
- 1 cup old-fashioned rolled oats
- 3/4 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup plain Greek yogurt
- 1/3 cup pure maple syrup
- 1/4 cup melted coconut oil (or neutral oil)
- 1 large egg, at room temperature
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 tbsp rolled oats
- 1 tbsp coarse sugar (like turbinado)
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or lightly grease with oil. Mash the bananas in a large mixing bowl until mostly smooth.
- To the mashed bananas, whisk in the melted coconut oil, maple syrup, egg, Greek yogurt, and vanilla extract until smooth and fragrant.
- Add the oats, whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, and salt. Gently fold with a spatula until just combined.
- Divide the batter evenly between the muffin cups. Sprinkle with oats and coarse sugar if desired.
- Bake for 18โ22 minutes, or until a toothpick comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Store muffins in an airtight container at room temperature for 2โ3 days, or in the fridge for up to a week. Reheat in the microwave for 10โ15 seconds or in the oven at 300ยฐF (150ยฐC) for 5โ7 minutes. Freeze extras for later. Great with almond butter, berries, or a warm chai latte!
