For the Muffins:
  • 3 large overripe bananas, mashed (about 1 1/2 cups)
  • 1 cup old-fashioned rolled oats
  • 3/4 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup plain Greek yogurt
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil (or neutral oil)
  • 1 large egg, at room temperature
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
Optional Topping:
  • 2 tbsp rolled oats
  • 1 tbsp coarse sugar (like turbinado)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or lightly grease with oil. Mash the bananas in a large mixing bowl until mostly smooth.
  2. To the mashed bananas, whisk in the melted coconut oil, maple syrup, egg, Greek yogurt, and vanilla extract until smooth and fragrant.
  3. Add the oats, whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, and salt. Gently fold with a spatula until just combined.
  4. Divide the batter evenly between the muffin cups. Sprinkle with oats and coarse sugar if desired.
  5. Bake for 18โ€“22 minutes, or until a toothpick comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.


Notes

Store muffins in an airtight container at room temperature for 2โ€“3 days, or in the fridge for up to a week. Reheat in the microwave for 10โ€“15 seconds or in the oven at 300ยฐF (150ยฐC) for 5โ€“7 minutes. Freeze extras for later. Great with almond butter, berries, or a warm chai latte!
