- 1.5 lbs chicken breast (diced)
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1/2- inch knob ginger (minced)
- 1 small zucchini (diced)
- 1 small bell pepper (diced)
- 1 cup cashews (coarsely chopped)
- 2 green onion sprigs (finely chopped)
- 1/4 cup cold water
- 2 tbsp soy sauce (or liquid aminos)
- 2 tbsp maple syrup or honey
- 1 tbsp rice vinegar
- 1/2 tbsp cornstarch
- 1 head butter lettuce (iceberg, or romaine lettuce, leaves separated)
- 1 tbsp avocado oil (or neutral oil)
Instructions
- Toast cashews in a dry skillet over medium heat until golden and fragrant. Transfer to a bowl.
- Add avocado oil to the skillet. Sauté onion, garlic, and ginger for 1 minute.
- Add diced chicken and cook 8–10 minutes, stirring occasionally, until fully cooked.
- In a small bowl, whisk together water, soy sauce, maple syrup, rice vinegar, and cornstarch.
- Add sauce, zucchini, and bell pepper to the chicken. Cook 1–2 minutes until vegetables are tender and sauce thickens.
- Stir in toasted cashews and green onions.
- Serve warm in lettuce cups.
