Description

Juicy, flavorful, and gluten-free, these healthy turkey meatballs without breadcrumbs are made with zucchini, basil, and mozzarella for moisture and flavor. Quick, easy, and perfect for low-carb or balanced meals.


Ingredients

  • 8 oz / 220g ground turkey
  • 3 garlic cloves (minced)
  • 2 tbsp basil (chopped)
  • 2 tbsp zucchini (shredded)
  • 2 tbsp mozzarella cheese (shredded)
  • 1 tsp green pesto
  • Salt and pepper (to taste)

Instructions

  1. In a bowl, mix ground turkey, garlic, basil, zucchini, mozzarella, pesto, salt, and pepper until just combined.
  2. Form walnut-sized meatballs with your hands.
  3. Heat a nonstick pan with a little oil. Add the meatballs and cover with a lid.
  4. Cook for 4–5 minutes, flip, then cook another 4–5 minutes until golden and cooked through (165°F / 74°C).
  5. Serve with salad, cauliflower rice, tomato-garlic sauce, or couscous.


Notes

  • For extra juiciness, don’t skip the zucchini.
  • Use damp hands to roll meatballs to avoid sticking.
  • Can be baked at 400°F (200°C) for 15–18 minutes instead of pan-fried.
