A creamy, spicy, and protein-packed buffalo chicken salad made with shredded chicken, Greek yogurt, and a zesty kick of Buffalo sauce. Perfect for meal prep, wraps, lettuce cups, or as a dip for game day.

  • 4 cups shredded chicken (about 1 lb cooked chicken breast or rotisserie chicken)
  • 2 stalks celery (finely chopped (about 1/2 cup))
  • 4 stalks green onion (finely chopped)
  • 1 cup plain Greek yogurt
  • 1/3 cup Buffalo sauce (more or less to taste)
  • Juice of 1/2 large lemon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt (more to taste)
  • 1/4 teaspoon black pepper

Instructions

  1. Shred chicken with two forks or a hand mixer.
  2. Chop celery and green onions.
  3. In a large bowl, whisk together Greek yogurt, Buffalo sauce, lemon juice, garlic powder, paprika, salt, and pepper.
  4. Add chicken, celery, and green onions. Stir until well coated.
  5. Taste and adjust spice (more Buffalo sauce) or creaminess (more yogurt).
  6. Chill for 30 minutes before serving for best flavor.
