Ingredients

  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup diced onion (about 1/2 large onion)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 (12-ounce) can evaporated milk
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 (10.5-ounce) can cream of chicken soup
  • 3 cups shredded cheddar cheese, divided
  • 1 cup fried onions

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC)
  2. Spray a 9 x 13 x 2-inch baking dish with nonstick spray
  3. Cook ground beef in a large skillet over medium-high heat until no pink remains
  4. Break beef into crumbles and stir in salt and pepper
  5. Add diced onion and bell peppers and cook until softened
  6. Drain excess fat and turn off heat
  7. Whisk evaporated milk, cream of mushroom soup, and cream of chicken soup in a bowl until smooth
  8. Layer half of the potato slices in the baking dish
  9. Top with half of the beef mixture
  10. Pour over half of the sauce
  11. Sprinkle with 1 1/2 cups shredded cheddar cheese
  12. Repeat layers with remaining potatoes, beef, sauce, and cheese
  13. Sprinkle fried onions evenly over the top
  14. Cover tightly with foil and bake for 75 to 80 minutes
  15. Remove foil and broil for 1 to 2 minutes until golden and bubbly
  16. Let rest for 10 minutes before serving


Notes

Slice potatoes thinly and evenly for best results. Drain beef thoroughly to prevent excess grease. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat covered in the oven at 325ยฐF for best texture.
