Description

A delightful blend of sweet and savory honey feta sweet potato rounds bring together tender, cinnamon-kissed sweet potato slices topped with creamy feta and a drizzle of honey. The warm spices mellow into the sweet potatoโ€™s natural sugars, while the feta adds a briny pop, and the honey glides everything into a perfect balance.


Ingredients

  • 3 large sweet potatoes, sliced into 1/3โ€‘inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon honey (regular or hot honey)
  • Extra honey for drizzling
  • Fresh parsley or chives, chopped

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment or lightly grease it.
  2. Arrange the sweet potato rounds in a single layer on the sheet. Drizzle with the olive oil and toss gently so each round is coated.
  3. In a small bowl, whisk together the kosher salt, black pepper, cinnamon, smoked paprika, ground cumin, ground coriander and red pepper flakes (if using).
  4. Sprinkle the spice mixture evenly over the sweet potatoes and gently toss again so each round is well seasoned.
  5. Roast for about 20โ€“25 minutes, flipping halfway through, until the edges are golden and the centers are tender when pierced with a fork.
  6. Remove from oven and while still warm, sprinkle the crumbled feta cheese across the rounds.
  7. Drizzle the tablespoon of honey (or hot honey) evenly over the rounds.
  8. Finish with a little extra honey drizzle for shine and a scattering of chopped fresh parsley or chives.
  9. Serve immediately while warm each bite should be a contrast of textures and flavors.


Notes

Store leftovers in an airtight container in the fridge for up to 2โ€“3 days. Reheat in a 375ยฐF (190ยฐC) oven for 5โ€“8 minutes or in a skillet to regain crispness. Drizzle fresh honey just before serving. Easily adapt to vegan by using plant-based feta and agave or maple syrup.
