- 3 large sweet potatoes, sliced into 1/3โinch rounds
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes (optional)
- 1/3 cup crumbled feta cheese
- 1 tablespoon honey (regular or hot honey)
- Extra honey for drizzling
- Fresh parsley or chives, chopped
Instructions
- Preheat your oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment or lightly grease it.
- Arrange the sweet potato rounds in a single layer on the sheet. Drizzle with the olive oil and toss gently so each round is coated.
- In a small bowl, whisk together the kosher salt, black pepper, cinnamon, smoked paprika, ground cumin, ground coriander and red pepper flakes (if using).
- Sprinkle the spice mixture evenly over the sweet potatoes and gently toss again so each round is well seasoned.
- Roast for about 20โ25 minutes, flipping halfway through, until the edges are golden and the centers are tender when pierced with a fork.
- Remove from oven and while still warm, sprinkle the crumbled feta cheese across the rounds.
- Drizzle the tablespoon of honey (or hot honey) evenly over the rounds.
- Finish with a little extra honey drizzle for shine and a scattering of chopped fresh parsley or chives.
- Serve immediately while warm each bite should be a contrast of textures and flavors.
