Description

Tender, flavorful, and oven-baked, these juicy chicken meatballs are a lighter twist on the classic. Made with ground chicken, Parmesan, breadcrumbs, and garlic, they’re perfect for weeknight dinners, meal prep, or party appetizers.


Ingredients

  • 1 pound ground chicken
  • 1 large egg
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup Parmesan cheese (grated)
  • 1 small garlic clove (grated)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan, garlic, olive oil, salt, and pepper. Mix gently until just combined.
  3. Form into about 26 small meatballs using a scoop or spoon. Place on prepared baking sheet.
  4. Bake for 15–20 minutes. Toss gently with a spatula, then bake an additional 5 minutes.
  5. Ensure meatballs reach an internal temperature of 165°F. Serve hot with your favorite sides or sauces.


Notes

  • Do not overmix the chicken mixture it can make the meatballs tough.
  • Meatballs can be frozen raw or cooked (see Storage & Reheating).
  • For best flavor, use a mix of dark and white ground chicken.
