Description

A creamy, romantic shrimp pasta with sun-dried tomatoes, spinach, and a velvety parmesan sauce that tastes like a love letter in every bite.


Ingredients

For the Shrimp:
  • 1 lb extra large shrimp (peeled & deveined)
  • 1/2 tbsp smoked paprika
  • 3/4 tbsp Italian seasoning
  • 1/4 tsp black pepper
  • 3/4 tsp salt
  • 1 1/2 tbsp sun-dried tomato oil (from jar)
For the Sauce:
  • 2 1/2 tbsp tomato paste
  • 1/2 cup sun-dried tomatoes, diced
  • 1 tbsp Italian seasoning
  • 1/3 tsp sweet smoked paprika
  • 1/2 tsp salt
  • 3/4 tsp dried basil
  • 2 tbsp gluten-free 1:1 flour
  • 2 cups diced spinach
  • 2 tbsp butter
  • 2 tbsp minced onion
  • 2 tbsp minced garlic
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • Fresh basil, chopped (for garnish)
  • 12 oz gluten-free penne

Instructions

  1. Cook your gluten-free penne according to package instructions for al dente. Drain and set aside.
  2. Toss shrimp with paprika, Italian seasoning, salt, and pepper until evenly coated.
  3. In a large skillet, heat sun-dried tomato oil over medium heat. Cook shrimp for 2 minutes per side until pink and C-shaped. Remove and set aside.
  4. In the same pan, melt butter over medium-low heat. Add garlic, onion, sun-dried tomatoes, tomato paste, Italian seasoning, paprika, salt, and basil. Stir until fragrantโ€”about 2 minutes.
  5. Sprinkle in the gluten-free flour, stir, then slowly pour in the vegetable broth and heavy cream. Add spinach. Cook for 5 minutes, stirring often, until sauce thickens and spinach wilts.
  6. Add parmesan and stir until melted. Fold in the pasta and shrimp. Stir gently to coat everything in that golden, creamy sauce.
  7. Top with fresh basil. Serve hot, and enjoy immediately.


Notes

Store in an airtight container in the fridge for up to 3 days. Not freezer-friendly. Reheat gently on the stovetop with a splash of cream or broth.
