Description

Creamy, buttery mashed sweet potatoes made with simple ingredients and perfect as a comforting side dish.


Ingredients

  • 3 pounds sweet potatoes
  • 1/4 cup melted butter, or ghee
  • 1/4 cup milk (dairy-free milk also works)
  • Kosher salt and freshly ground black pepper, to taste
  • Optional: finely chopped parsley for garnish

Instructions

  1. Peel and chop the sweet potatoes into chunks
  2. Boil in a large pot of water until fork tender, about 15-20 minutes
  3. Drain and return the sweet potatoes to the pot
  4. Add melted butter and milk, then mash until smooth
  5. Season with salt and pepper to taste
  6. Scoop into a serving bowl and sprinkle with chopped parsley
  7. Serve warm
