- 3 pounds sweet potatoes
- 1/4 cup melted butter, or ghee
- 1/4 cup milk (dairy-free milk also works)
- Kosher salt and freshly ground black pepper, to taste
- Optional: finely chopped parsley for garnish
Instructions
- Peel and chop the sweet potatoes into chunks
- Boil in a large pot of water until fork tender, about 15-20 minutes
- Drain and return the sweet potatoes to the pot
- Add melted butter and milk, then mash until smooth
- Season with salt and pepper to taste
- Scoop into a serving bowl and sprinkle with chopped parsley
- Serve warm
Notes
For extra flavor, try adding a pinch of cinnamon or a drizzle of maple syrup. This dish can be made ahead and reheated before serving.
