These McGriddles Bites deliver everything I love about breakfast the sweet, the savory, the golden crisp edges of a pancake all wrapped up into one poppable, make-ahead treat. Imagine warm cheddar and sausage cradled in maple-sweetened pancake batter, baked until golden and perfect for dipping into syrup.

- 2 cups pancake mix (the kind that only needs water)
- 1 1/2 cups water
- 1 cup shredded cheddar cheese
- 1/4 cup maple syrup (preferably real maple syrup)
- 1 lb breakfast sausage
Instructions
- Preheat the oven to 400ยฐF (200ยฐC). Lightly spray a mini muffin tin with nonstick cooking spray.
- Brown the sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Once browned and fully cooked, drain the grease and set aside.
- In a large mixing bowl, stir together the pancake mix, water, shredded cheese, and maple syrup until just combined.
- Fold in the cooked sausage, stirring gently to distribute evenly.
- Spoon the batter into the wells of the mini muffin tin, filling each about 3/4 of the way full.
- Bake for 12โ15 minutes, or until the tops are golden and a toothpick comes out clean.
- Cool slightly, then serve warm with extra syrup on the side for dipping, if you like.
Notes
Store in an airtight container in the refrigerator for up to 4 days. Freeze in a zip-top bag or freezer-safe container for up to 2 months. Reheat in the microwave for 20โ30 seconds, oven at 350ยฐF for 5โ7 minutes, or air fryer for 3โ4 minutes at 350ยฐF. For a twist, try using spicy sausage, mixing in chives, or swapping the cheese!
