Description

These McGriddles Bites deliver everything I love about breakfast the sweet, the savory, the golden crisp edges of a pancake all wrapped up into one poppable, make-ahead treat. Imagine warm cheddar and sausage cradled in maple-sweetened pancake batter, baked until golden and perfect for dipping into syrup.


Ingredients

  • 2 cups pancake mix (the kind that only needs water)
  • 1 1/2 cups water
  • 1 cup shredded cheddar cheese
  • 1/4 cup maple syrup (preferably real maple syrup)
  • 1 lb breakfast sausage

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC). Lightly spray a mini muffin tin with nonstick cooking spray.
  2. Brown the sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Once browned and fully cooked, drain the grease and set aside.
  3. In a large mixing bowl, stir together the pancake mix, water, shredded cheese, and maple syrup until just combined.
  4. Fold in the cooked sausage, stirring gently to distribute evenly.
  5. Spoon the batter into the wells of the mini muffin tin, filling each about 3/4 of the way full.
  6. Bake for 12โ€“15 minutes, or until the tops are golden and a toothpick comes out clean.
  7. Cool slightly, then serve warm with extra syrup on the side for dipping, if you like.


Notes

Store in an airtight container in the refrigerator for up to 4 days. Freeze in a zip-top bag or freezer-safe container for up to 2 months. Reheat in the microwave for 20โ€“30 seconds, oven at 350ยฐF for 5โ€“7 minutes, or air fryer for 3โ€“4 minutes at 350ยฐF. For a twist, try using spicy sausage, mixing in chives, or swapping the cheese!
