- 1 lb smoked beef or andouille-style chicken sausage, sliced into 1/4-inch coins
- 1 large yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 2 tbsp Cajun seasoning
- 1 (14.5 oz) can diced fire-roasted tomatoes, undrained
- 4 cups low-sodium chicken or vegetable broth
- 1 lb penne pasta, uncooked
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley or sliced green onions, for garnish
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat
- Add sliced sausage and cook until browned and slightly crisp on the edges
- Remove sausage with a slotted spoon and set aside, leaving drippings in the pot
- Add onion and bell peppers and cook 5โ7 minutes until softened
- Stir in minced garlic and Cajun seasoning and cook 1 minute until fragrant
- Pour in fire-roasted tomatoes with juices and broth and bring to a gentle boil
- Stir in uncooked penne, ensuring it is mostly submerged
- Reduce to a simmer, cover, and cook 12โ15 minutes until pasta is al dente, stirring occasionally
- Lower heat and stir in heavy cream and Parmesan cheese until melted and smooth
- Return sausage to the pot and season with salt and black pepper to taste
- Let sit off heat for 1 minute to thicken
- Garnish with fresh parsley or green onions and serve warm

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 2 months though cream texture may slightly change. Reheat gently on the stovetop with a splash of broth or cream, or microwave in 30-second intervals stirring between.
