Description

One Pot Creamy Cajun Sausage Pasta is bold, comforting, and indulgent without the cleanup. Smoky sausage, tender bell peppers, Cajun spices, and a silky Parmesan cream sauce come together in one pot for the ultimate Southern-inspired comfort meal.


Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked beef or andouille-style chicken sausage, sliced into 1/4-inch coins
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 (14.5 oz) can diced fire-roasted tomatoes, undrained
  • 4 cups low-sodium chicken or vegetable broth
  • 1 lb penne pasta, uncooked
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley or sliced green onions, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat
  2. Add sliced sausage and cook until browned and slightly crisp on the edges
  3. Remove sausage with a slotted spoon and set aside, leaving drippings in the pot
  4. Add onion and bell peppers and cook 5โ€“7 minutes until softened
  5. Stir in minced garlic and Cajun seasoning and cook 1 minute until fragrant
  6. Pour in fire-roasted tomatoes with juices and broth and bring to a gentle boil
  7. Stir in uncooked penne, ensuring it is mostly submerged
  8. Reduce to a simmer, cover, and cook 12โ€“15 minutes until pasta is al dente, stirring occasionally
  9. Lower heat and stir in heavy cream and Parmesan cheese until melted and smooth
  10. Return sausage to the pot and season with salt and black pepper to taste
  11. Let sit off heat for 1 minute to thicken
  12. Garnish with fresh parsley or green onions and serve warm


Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 2 months though cream texture may slightly change. Reheat gently on the stovetop with a splash of broth or cream, or microwave in 30-second intervals stirring between.
