A cozy, savoury treat made with flaky puff pastry and a juicy, herbaceous pork filling sweetened with apple and Parmesan. Perfect for gatherings, lunchboxes, or snacking any time.

- 1 Tablespoon olive oil
- 1 lb. ground pork
- 3 garlic cloves, minced
- 1 small onion, minced
- 1 apple, finely chopped
- 1 teaspoon fennel seeds, crushed
- 1 teaspoon fresh sage, chopped
- 1 teaspoon fresh thyme, chopped
- 1 Tablespoon stone‑ground mustard
- 2 eggs (divided)
- 1/2 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 17 oz puff pastry
Instructions
- Thaw puff pastry on floured counter or parchment
- Preheat oven to 400°F
- Heat olive oil; sauté onion and apple 3–4 minutes. Add garlic 30 seconds. Cool.
- Mix pork, sautéed mixture, Parmesan, panko, mustard, 1 egg, herbs, salt, and pepper. Chill.
- Roll out pastry slightly. Cut each sheet in half.
- Shape pork mix into 4 logs. Place down center of each pastry half.
- Whisk second egg. Brush pastry edges. Roll and seal. Brush tops. Chill if needed.
- Cut each log into 5 pieces. Place seam-down on parchment tray.
- Bake 23–25 minutes or air fry at 390°F for 7–8 minutes. Rest slightly. Serve warm.
Notes
Store cooled rolls in an airtight container for up to 3 days or freeze. Reheat in oven at 350°F for 8–10 minutes. Avoid microwave to maintain crispness. Mini versions work well just reduce bake time. Adapt with turkey, chicken, or plant-based alternatives for different dietary needs.
