Description

These roasted green beans are irresistibly crispy, garlicky, and finished with a nutty sprinkle of parmesan and a zesty splash of lemon. A quick and flavorful side for any meal.


Ingredients

  • 1 pound fresh green beans, ends trimmed
  • 2 tablespoons olive oil
  • 2 large cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/2 cup parmesan cheese, freshly grated (Parmigiano-Reggiano recommended)
  • Juice of 1/2 a lemon
  • 1-2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400ยฐF (205ยฐC) and line a large baking sheet with parchment paper.
  2. Trim the ends off your green beans and spread them out on the baking sheet.
  3. Toss beans with olive oil, minced garlic, salt, and pepper until evenly coated. Spread them into a single layer.
  4. Sprinkle grated parmesan evenly over the beans.
  5. Roast for 20 minutes, or until the green beans are fork-tender, edges are golden brown, and cheese is crisp.
  6. Remove from oven and drizzle with fresh lemon juice.
  7. Garnish with chopped parsley and season with more salt and pepper if desired.
  8. Serve hot and enjoy the crispy, garlicky, cheesy goodness.


Notes

Best served fresh out of the oven. To reheat, place under a broiler for a few minutes to maintain crispiness.
