Description

Quick, crispy, and irresistibly flavorful, these spinach and feta quesadillas are a warm hug folded in a tortilla ready in minutes and endlessly customizable.


Ingredients

  • 4 large tortillas (flour, whole wheat, or gluten-free)
  • 1 cup crumbled feta cheese
  • 2 cups fresh spinach (chopped)
  • 1 tbsp olive oil or butter
  • Optional:
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup sliced olives
  • 1/2 cup cooked grilled chicken
  • 1/2 cup caramelized onions

Instructions

  1. Wash and chop spinach. Prep any optional ingredients.
  2. Lay out a tortilla and fill one half with spinach, feta, and extras.
  3. Fold and press to seal.
  4. Heat skillet over medium heat with olive oil or butter.
  5. Cook each quesadilla 2โ€“3 minutes per side, until golden.
  6. Slice into wedges and serve warm with dips or salad.
