Description

If there's a breakfast that brings everyone to the table with sleepy smiles and empty plates, itโ€™s this Tater Tot Breakfast Casserole with Sausage. Savory, cheesy, comforting and filled with crispy tater tots and spicy sausage, itโ€™s the perfect make-ahead brunch hero.

Ingredient List:
  • 1 (32-ounce) bag frozen Tater Totsยฎ, divided (do not thaw)
  • 1 pound hot bulk pork sausage (or ground turkey sausage)
  • 1 medium onion, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups freshly grated sharp cheddar cheese
  • 1 1/2 cups freshly grated pepper Jack cheese
For the Egg Mixture:
  • 8 large eggs
  • 2 cups half-and-half
  • 4 oz diced green chilies
  • 1 tsp dried parsley
  • 1/2 tsp EACH: paprika, ground mustard, dried oregano, salt, pepper

Instructions

  1. Preheat oven to 350ยฐF and spray a 9"x13" baking dish with nonstick spray. Set aside.
  2. In a large skillet, cook sausage with diced onion and peppers over medium-high heat, breaking up the meat. When browned and veggies are soft, stir in garlic and cook for 30 seconds. Drain grease.
  3. Transfer the sausage mixture to the prepared baking dish and let cool slightly.
  4. In a large bowl, whisk together eggs, half-and-half, green chilies, and all seasonings.
  5. Add half the tater tots and ยพ cup each of cheddar and pepper Jack to the sausage mixture. Stir gently and spread evenly in the dish.
  6. Pour the egg mixture evenly over the casserole. Top with remaining tater tots in a single layer.
  7. Bake uncovered for 70โ€“80 minutes, or until the eggs are set in the center.
  8. Remove from oven and sprinkle remaining cheese on top. Return to oven for 5โ€“10 minutes until melted and golden.
  9. Let rest a few minutes before slicing. Top with fresh chopped chives or green onions if desired.


Notes

To make ahead, assemble the casserole the night before (excluding final cheese layer), cover, and refrigerate. Bake as directed. Store leftovers tightly covered in the fridge for up to 4 days, or freeze individual portions for up to 2 months. Reheat in the microwave or oven. Great with hot sauce or a side of fruit!
