  • 4 9-inch whole wheat tortillas (or large tortillas of choice)
  • 3/4 cup hummus (about 3 tablespoons per wrap)
  • 2 cups baby spinach leaves
  • 1/2 English cucumber (thinly sliced)
  • 1/2 cup sliced roasted red peppers
  • 1 large avocado (pitted, peeled, and sliced or chopped)
  • 1/4 small red onion (thinly sliced)
  • 1/4 cup crumbled feta cheese
  • Freshly ground black pepper (to taste)

Instructions

  1. Lay tortillas flat on a clean surface or cutting board.
  2. Spread 3 tablespoons of hummus over each tortilla, leaving about a 1-inch border around the edges.
  3. Place spinach, cucumber, roasted red peppers, avocado, and red onion down the center of each tortilla, slightly off-center for easier rolling.
  4. Sprinkle with crumbled feta cheese and season with black pepper.
  5. Fold the sides inward, then roll tightly burrito-style to enclose the filling.
